cake is really easy for me, but i don't know how to cook it except by weighting all the ingredients: i can't use standard measures at all, and i fuck up a lot when i try.

p.s. that is sponge cakes from scratch, pastry cream made with vanilla bean and diced candied orange, and then those oranges around the outside were candied with grand marnier.

spring form pan, buttered and sugared, then lined with the oranges. the cake and pastry cream layers were built into it, then refrigerated for many hours to set. flipped over just prior to serving.

That is usually what I buy when I go to the candy store. My MIL made a bunch of it one year for us for Xmas, but I think it is a *lot* of work.

Also, now I must visit that store in Rochester. NY is kind of a ways off, but...
