chili garlic sauce has a harsh flavor to me. sambal oelek made by the same company is much better I think. I love sriracha

This confirms what I recall reading a while back:

In June 2022, Huy Fong Foods announced that they would be pausing production of its popular Sriracha Hot Chili Sauce, due to a “severe shortage” of chili peppers.

Not sure if they've resumed production, yet.

There are several different brands making sriracha, ranging from pretty good to awful. You can spot the worst ones because they say "no MSG"

I used to liberally use my friend's sriracha sauce when I'd house sit, and he had the Huy Fong brand. weirdly I had just assumed that's the type of packaging most sriracha came in, without realizing it was just the most famous (well, to us) brand.

Uni-Eagle is just about ok, 5/10
Flying Goose is acceptable, maybe 6.5/10

xp yeah, not that i'm short on any, but i've lately been making small amounts just to mix it up. lately i've been going with lime, grilled onion, fresno/serrano/habanero, lime, cilantro, and salt.
