I used to do that, but the convenience of setting the rice and beans a-cooking without further attention frees up headspace for cooking the burrito fillings, or pilaf/chickpeas/kabobs, etc

I would probably consider it if I had more counter space available in my kitchen. At this point I can pretty much cook those items on auto-pilot.
