Cheddar is almost never not dull and Stinking Bishop is rubbish. The UK does some brilliant goats cheeses but plenty of the bigger names just can't measure up to Europe's

Whereas I suspect if you look at France they are exporting millions of tonnes of cheese a month and would look at you with baffled disgust if you mentioned that other countries make it at all.

My local supermarket in Paris, in a quite untouristy part of the city, carries Wyke Farms cheddar, in slices, blocks, and shredded as well. I have no idea if that's a "good" cheddar but you do export some cheese

(I think British cheese is generally excellent fwiw)

I love mixing a few different cheeses for sauces cos it seems any combination seems to work fine, never had a disaster yet. Stilton gives a lovely texture to sauces and you can't go wrong with a bit of blue brie in there as well.

absolutely shocking british cheese situation in the US. just shocking. nothing but cheddar, and what they call "sharp cheddar" is so mild i would not give it to an infant with a weak stomach, and what they call mild is essentially milk in a solid form. you couldn't kick a ball in the street.
