There are no laws about what to eat on Thanksgiving, only customs. I expect that people who, on Thanksgiving, gladly gorge on green bean casserole, creamed onions, candied yams and so on, do not customarily eat well-prepared, healthy meals on other days either.

my old friend used to pick a different international cuisine to make an elaborate meal each thanksgiving. I only managed to go once, but it was such a great idea

I propose we switch the traditional Thanksgiving dinner to this. I've made Momofuku's Bo Ssam several times for different groups of friends and it always blows them away. It's a pefect dish to share with a large group of people, too.https://cooking.nytimes.com/recipes/12197-momofukus-bo-ssam
Apparently I'm not the only one who thinks so.https://www.vox.com/2014/11/24/7265067/turkey-pork-shoulder-thanksgiving

I made turkey mole one year and now I'm a victim of its success. I get bugged to make it every year now. Obv it's a pretty big chore to even shop for, let alone make.

that is a chore, but at least mole can be made well in advance, no? i've had mole in my fridge keep fine for months before and it never deteriorated the slightest
