you've got your chicken, your cheddar broccoli, your herb & butter. Whole world of rice out there. Amazing that it's all grown in san francisco.

Rice is incredible & risotto is a top dish, what the hell is going on here.

droit au butt (Euler), Friday, 12 October 2018 15:34 (five years ago) link

Rice in burritos is trash though, fuck SF

droit au butt (Euler), Friday, 12 October 2018 15:34 (five years ago) link

Yeah, I always try to leave the rice out of burritos. I did try to make one of those ramen burritos once but it wasn't great.

The rice (eg basmati) you get in america is grown in california

Japan buys that rice in container loads

To feed to their animals

Because it’s not meant for japanese human consumption

Good enough for americans to hail as good rice for a nice warm meal

Unless it’s the imported the stuff of course

F# A# (∞), Friday, 12 October 2018 15:45 (five years ago) link

I avoid risotto because it's almost always shit, but that's more down to British cooking, nothing against the dish in principle

you know there are shops that sell basmati from a variety of places. have you ever been to an indian or pakistani market?

marcos, Friday, 12 October 2018 15:46 (five years ago) link

Not only have i been

I used to cook indian food like a couple times a week for a few years

I don’t like basmati but I didn’t realize it until i tried a variety of japanese rices

F# A# (∞), Friday, 12 October 2018 15:48 (five years ago) link

I like basmati just fine but yeah it’s only since I started going to Japan regularly that I’ve really come to appreciate rice. We have a Zojirushi for it now. The Japanese rice we get here for a reasonable price is Italian, but it’s been judged ok by Japanese rice masters or whatever so shrug it’s good

Rice from the Camargue is our local staple. We cook it by frying the grains first in a bit of oil and then when they turn golden brown add the water. Boiled rice is IMO inedible but this way, which I learned from my South American dad, is stupendous.

droit au butt (Euler), Friday, 12 October 2018 16:08 (five years ago) link

yes euler that is the best way

marcos, Friday, 12 October 2018 16:17 (five years ago) link

each grain coated in oil

marcos, Friday, 12 October 2018 16:17 (five years ago) link

i get good results doing the pilaf style toasting in fat and then using more water with basmati. i rinse jasmine and don't use oil or as much water, and that is also good.

this doesn't seem to be true. anyway price, nationalism, and expectation built on experience do some work here.

for i, sock in enumerate (Sufjan Grafton), Friday, 12 October 2018 16:32 (five years ago) link

feeling v triggered by all this rice hate

Squeaky Fromage (VegemiteGrrl), Friday, 12 October 2018 16:37 (five years ago) link

it seems that japanese do import a fair amount of calrose from california for use in food because it is the correct grain size.

you're reading that other calrose rice article wrong btw

F# A# (∞), Friday, 12 October 2018 16:44 (five years ago) link

those links basically say that the situation has more to do with price manipulation than a disgust with california rice

for i, sock in enumerate (Sufjan Grafton), Friday, 12 October 2018 16:51 (five years ago) link

i also don't support growing rice in drought stricken california, though

for i, sock in enumerate (Sufjan Grafton), Friday, 12 October 2018 16:52 (five years ago) link

this thread is like cơm tấm but where the soul, not the grain, of rice has been fractured

you obviously have never spent enough time talking to japanese people about japanese grown food vs foreign grown food

F# A# (∞), Friday, 12 October 2018 17:03 (five years ago) link

lol that doesn't mean they're correct!

for i, sock in enumerate (Sufjan Grafton), Friday, 12 October 2018 17:05 (five years ago) link

No one is arguing they’re correct

But japanese find US rice gross so the japanese gov’t find ways to use imported rice strategically and sometimes pressuring/fooling them into eating it

F# A# (∞), Friday, 12 October 2018 17:13 (five years ago) link

perhaps I misunderstood, but you seemed to be posting that bit about japan importing feed rice to support two of your ideas itt: 1) japanese rice is the best and 2) basmati rice is bad. I am only defending texmati and pointing out that the support of that post is weak and that all rice is good. yerac is the true enemy here. let's not be distracted by infighting fellow rice lover.

for i, sock in enumerate (Sufjan Grafton), Friday, 12 October 2018 17:19 (five years ago) link

Nah dawg

They are two separate statements

I understand it’s subjective and this is the food controp thread so yeah

Coucous is also trash. pellet carbs are for the elderly.

Yerac, Friday, 12 October 2018 17:35 (five years ago) link

couscous must be the simplest thing in the world to cook, which is nice

for i, sock in enumerate (Sufjan Grafton), Friday, 12 October 2018 17:41 (five years ago) link

yeah i like it

Squeaky Fromage (VegemiteGrrl), Friday, 12 October 2018 17:54 (five years ago) link

my controversial opinion is that icecream & cake is only acceltable if the cake is warm/hot

if it’s just like, room temperature or cold birthday cake or whatever then NO ICECREAM

yes i am sally from when harry met sally

Squeaky Fromage (VegemiteGrrl), Friday, 12 October 2018 17:56 (five years ago) link

*acceptable

Squeaky Fromage (VegemiteGrrl), Friday, 12 October 2018 17:56 (five years ago) link

I think my preference here depends on the type and flavor of cake

for i, sock in enumerate (Sufjan Grafton), Friday, 12 October 2018 18:11 (five years ago) link

for example, warm coconut cake sounds undesirable somehow

for i, sock in enumerate (Sufjan Grafton), Friday, 12 October 2018 18:13 (five years ago) link

are we talking freshly baked warm cake or microwaved cake?

for i, sock in enumerate (Sufjan Grafton), Friday, 12 October 2018 18:14 (five years ago) link

heat sources are irrelevant

cake that you like, whatever flavor, is only good with icecream if the cake is warm

if the cake is cold, throw that scoop of icecream in the trash

Squeaky Fromage (VegemiteGrrl), Friday, 12 October 2018 18:21 (five years ago) link

that is my stance

Squeaky Fromage (VegemiteGrrl), Friday, 12 October 2018 18:21 (five years ago) link

throw that scoop of icecream in the trash

rude

A is for (Aimless), Friday, 12 October 2018 18:22 (five years ago) link

does the rule apply to pie?

for i, sock in enumerate (Sufjan Grafton), Friday, 12 October 2018 18:26 (five years ago) link

Pie is far superior to cake.

Yerac, Friday, 12 October 2018 18:35 (five years ago) link

Can i throw it in my mouth then eat the warm pie

F# A# (∞), Friday, 12 October 2018 18:35 (five years ago) link

i feel the same way about pie

Squeaky Fromage (VegemiteGrrl), Friday, 12 October 2018 18:55 (five years ago) link

but cold cake & icecream is specifically a nonstarter for me

Squeaky Fromage (VegemiteGrrl), Friday, 12 October 2018 18:56 (five years ago) link

if you’ve got a belly for cake AND ice cream then your slice of cake is too small

droit au butt (Euler), Friday, 12 October 2018 19:17 (five years ago) link

I have never been served cold cake with ice cream, but that sounds sort of wrong. I guess you don't like ice cream with jelly.

mfktz (Camaraderie at Arms Length), Friday, 12 October 2018 19:35 (five years ago) link

not really unless i can mix them together & make icecream & jelly mush

Squeaky Fromage (VegemiteGrrl), Friday, 12 October 2018 19:38 (five years ago) link

…ice cream with jelly?

I have measured out my life in coffee shop loyalty cards (silby), Friday, 12 October 2018 19:39 (five years ago) link

OMG I love cake sooo much, I could literally eat all the cake in the world. I'm basically the cake monster. get in my belly!

imago, Friday, 12 October 2018 19:46 (five years ago) link

Jelly as in jello. Kids party favourite in the UK, no adult would be seen eating it
