I like the coldness of somen and the dipping. I prefer cold noodles.

Rice is just, whatever. I am not one of those asians that eats it every day to feel complete.

I like the coldness of somen
A small double take there.

Japanese rice is the best in the world and if you have some fancy rice in japan, the difference is totally noticeable — it just tastes that much betterIt’s hard to eat white rice in north american asian restaurants after getting used to the fancy stuff

I've been to Japan for a month. The rice is fine. I've been to Taiwan for in total maybe 6 months of my life. The rice is fine. Blech.

Lasagna with bechamel should be called bukkake style. I hate having to order ramen bukkake in american restaurants even though it's on the menu.
― Yerac, Friday, 12 October 2018 13:56 (five years ago) link
Lasagna with bechamel should be illegal.
Plenty of Japanese mostly skip the soup part of ramen, e.g. at Jiro-style places.

I’ve literally had like a dozen types of rice all different quality in the course of a a couple months and if you can’t tell the difference you’re 1 mixing it with other stronger flavors and/or 2 you haven’t had someone to guide you through the differences in flavorIt’s like wine in some ways

Since I moved back from China I cannot get used to the rice in the UK, its all dry, flavourless long-grain stuff. The only acceptable stuff in supermarkets is the Thai fragrant rice, and even that isn't really what I want. Luckily we have a Korean shop not far off, and I just buy bags of imported "sushi rice" these days, that will do. My wife, who has eaten rice every day in her life, does not care for rice of any sort, but has been buying basmati as it is a change at least, but unless it's used in chaofan I find it a bit of a slog to eat.

We agree 90% about food, but that other 10% we really don't agree on. We can't have risotto in the house because it's "Italian pigswill rice" apparently, and I am not allowed to make any sort of lasagne as she views it as an abomination.

I like basmati just fine but yeah it’s only since I started going to Japan regularly that I’ve really come to appreciate rice. We have a Zojirushi for it now. The Japanese rice we get here for a reasonable price is Italian, but it’s been judged ok by Japanese rice masters or whatever so shrug it’s goodRice from the Camargue is our local staple. We cook it by frying the grains first in a bit of oil and then when they turn golden brown add the water. Boiled rice is IMO inedible but this way, which I learned from my South American dad, is stupendous.

each grain coated in oil
i get good results doing the pilaf style toasting in fat and then using more water with basmati. i rinse jasmine and don't use oil or as much water, and that is also good.
