I like the coldness of somen and the dipping. I prefer cold noodles.

rice is so useless
Guess you never had dece rice

mfktz (Camaraderie at Arms Length), Friday, 12 October 2018 12:22 (five years ago) link

Maybe once, it was a persian saffron chicken dish.

Rice is just, whatever. I am not one of those asians that eats it every day to feel complete.

Yerac, Friday, 12 October 2018 12:28 (five years ago) link

Bukkake style is okay

I like the coldness of somen

A small double take there.

Japanese rice is the best in the world and if you have some fancy rice in japan, the difference is totally noticeable — it just tastes that much better

It’s hard to eat white rice in north american asian restaurants after getting used to the fancy stuff

I've been to Japan for a month. The rice is fine. I've been to Taiwan for in total maybe 6 months of my life. The rice is fine. Blech.

Yerac, Friday, 12 October 2018 13:48 (five years ago) link

Lasagna with bechamel should be called bukkake style. I hate having to order ramen bukkake in american restaurants even though it's on the menu.

Yerac, Friday, 12 October 2018 13:56 (five years ago) link

Lasagna with bechamel should be illegal.

Plenty of Japanese mostly skip the soup part of ramen, e.g. at Jiro-style places.

I’ve literally had like a dozen types of rice all different quality in the course of a a couple months and if you can’t tell the difference you’re 1 mixing it with other stronger flavors and/or 2 you haven’t had someone to guide you through the differences in flavor

It’s like wine in some ways

F# A# (∞), Friday, 12 October 2018 14:46 (five years ago) link

No, I get it. I still don't like rice.

Yerac, Friday, 12 October 2018 14:49 (five years ago) link

That said I am going to eat the shit out of some handrolls today. I actually make good sushi rice. Rice is still trash though.

I am staying with my singaporean friend and he keeps making me daily rice even though i have explicitly stated over the last decade that I hate rice. We joke about it and then make a date to have the same conversation the next day.

Yerac, Friday, 12 October 2018 14:57 (five years ago) link

What about korean purple rice ugh

🤤

F# A# (∞), Friday, 12 October 2018 14:58 (five years ago) link

Even when I was in India I passed on the rice every single time.

Yerac, Friday, 12 October 2018 14:59 (five years ago) link

And fuck risotto. Waste of cheese and time.

Yerac, Friday, 12 October 2018 14:59 (five years ago) link

Can’t take this much h8

F# A# (∞), Friday, 12 October 2018 15:00 (five years ago) link

Since I moved back from China I cannot get used to the rice in the UK, its all dry, flavourless long-grain stuff. The only acceptable stuff in supermarkets is the Thai fragrant rice, and even that isn't really what I want. Luckily we have a Korean shop not far off, and I just buy bags of imported "sushi rice" these days, that will do. My wife, who has eaten rice every day in her life, does not care for rice of any sort, but has been buying basmati as it is a change at least, but unless it's used in chaofan I find it a bit of a slog to eat.

mfktz (Camaraderie at Arms Length), Friday, 12 October 2018 15:04 (five years ago) link

Give your wife a hi-five for me. She knows what's up.

F# A# (∞), Friday, 12 October 2018 15:07 (five years ago) link

We agree 90% about food, but that other 10% we really don't agree on. We can't have risotto in the house because it's "Italian pigswill rice" apparently, and I am not allowed to make any sort of lasagne as she views it as an abomination.

mfktz (Camaraderie at Arms Length), Friday, 12 October 2018 15:09 (five years ago) link

I have had amazing risotto before, but most have been awful, get the ingredients or timings wrong and it's a disaster.

mfktz (Camaraderie at Arms Length), Friday, 12 October 2018 15:14 (five years ago) link

you've got your chicken, your cheddar broccoli, your herb & butter. Whole world of rice out there. Amazing that it's all grown in san francisco.

droit au butt (Euler), Friday, 12 October 2018 15:34 (five years ago) link

Yeah, I always try to leave the rice out of burritos. I did try to make one of those ramen burritos once but it wasn't great.

The rice (eg basmati) you get in america is grown in california

Japan buys that rice in container loads

To feed to their animals

Because it’s not meant for japanese human consumption

Good enough for americans to hail as good rice for a nice warm meal

Unless it’s the imported the stuff of course

F# A# (∞), Friday, 12 October 2018 15:45 (five years ago) link

I avoid risotto because it's almost always shit, but that's more down to British cooking, nothing against the dish in principle

you know there are shops that sell basmati from a variety of places. have you ever been to an indian or pakistani market?

marcos, Friday, 12 October 2018 15:46 (five years ago) link

Not only have i been

I used to cook indian food like a couple times a week for a few years

I don’t like basmati but I didn’t realize it until i tried a variety of japanese rices

F# A# (∞), Friday, 12 October 2018 15:48 (five years ago) link

I like basmati just fine but yeah it’s only since I started going to Japan regularly that I’ve really come to appreciate rice. We have a Zojirushi for it now. The Japanese rice we get here for a reasonable price is Italian, but it’s been judged ok by Japanese rice masters or whatever so shrug it’s good

Rice from the Camargue is our local staple. We cook it by frying the grains first in a bit of oil and then when they turn golden brown add the water. Boiled rice is IMO inedible but this way, which I learned from my South American dad, is stupendous.

droit au butt (Euler), Friday, 12 October 2018 16:08 (five years ago) link

marcos, Friday, 12 October 2018 16:17 (five years ago) link

each grain coated in oil

marcos, Friday, 12 October 2018 16:17 (five years ago) link

i get good results doing the pilaf style toasting in fat and then using more water with basmati. i rinse jasmine and don't use oil or as much water, and that is also good.

this doesn't seem to be true. anyway price, nationalism, and expectation built on experience do some work here.

it seems that japanese do import a fair amount of calrose from california for use in food because it is the correct grain size.

F# A# (∞), Friday, 12 October 2018 16:44 (five years ago) link

those links basically say that the situation has more to do with price manipulation than a disgust with california rice
