I have been trying to work out why there is such an outcry over bechamel on lasagne, but if it's wet and sloppy then fair enough, that's bad. Bechamel doesn't need to be like that.

iirc (was a long time ago) i used to make lasagna @ a resto. and bechamel was gently layed over the top layer of red sauce. so it wasn't actually in it. and after it cooked it was a creamy layer, but not runny at all. i always thought it was a presentation thing - like the contrast it makes with the sauce just underneath it. and you kind of had to make the bechamel just right - couldn't be too runny or too thick to spread perfectly while at the same time avoiding getting any hint of the red from the sauce underneath mixed in. also seemed to make a pretty rustic dish a little more elegant?

Yeah, people should eat what they want. I only get annoyed when people prepare food for other people and they totally won't even try it or just are assholes about it. I eat the lasagna with bechamel when people prepare it for me and say "wow, this is amazing."

my dad used to be terrible for this, if i mentioned in conversation having eaten something he didn't like - and there was plenty of stuff he didn't like - he'd insist every bleeding time on a quick monologue about how horrible the thing i'd just mentioned was. in case i'd forgotten the previous 200 times he'd told me he didn't care for curry.

the only things I don't eat are mayo, cooked eggs (except in like fried rice) & savory cream sauces. & when I'm traveling I'll even try those. I mean, I once ate a cow's seminal vesicle, how much worse can béchamel be? (actually the seminal vesicle was pretty good)

Someone made me kidneys once because I had not had them before and was interested. They were disgusting. I still ate 5 and had nightmares all night. They ate one because they don't like kidneys.

Tell you what - I've never been to the USA, but I spent most of my adulthood in China, and very familiar with the few overpriced western grocery stores in major cities which only had US stuff, a little Australian, maybe a few French things, never anything from the UK. The sausages and bacon were always pre-cooked. Literally was unable to buy raw bacon or sausages at all. Is this a refrigeration / transport issue or are these things generally pre-cooked?

precooked bacon is available but it is a comedy product aimed at miserable people. precooked microwavable frozen breakfast sausage is probably somewhat more popular. Hot dogs are fully cooked. Otherwise, no.

Oddly enough I am a fan of precooked bacon (esp the trader joe's one). I am super lazy about making food in the morning and like breakfast burritos with hot sauce (and bacon when feeling decadent). Cooking bacon is way too annoying, especially in a house full of vegans/vegetarians.

I never really liked kielbasa but there's a not dissimilar French sausage called saucisse de Montbéliard and it is really really fantastic when cooked in red wine all day, and I wonder if the same would work with kielbasa.

because I live in a heavily muslim quartier I can't really get good sausage close by (i.e. within half a kilometer) so we uh had hot dogs for dinner tonight. no they are not in any way better than american hot dogs, but they are just fine nonetheless.

At a school I was working at this year they had switched to beef sausages because they had some Muslim students, and they were a vast improvement from the cheap bangers they had before, if a bit too salty.

Australia, for all its British, Irish and Italian heritage really can’t do sausages well. Beef sausages are the staple and not good, bacon, is very much lacking and the Italian sausages seem somewhat dry. Maybe Australian pigs aren’t fat enough.
