voted Parmigiano and already regretting since I was just reminded of the excellent margarita slice with fresh buffalo mozzarella I had a few weeks ago

and the caprese I made with fresh tomatoes and not even buffalo just regular mozzarella

but parmesan is so great in so many dishes, in a way the best cheese of all

voted parmigiano reggiano because, yes, it's a staple

i really like mixing pecorino romano though - parmesan is no good for my favorite pastas (cacio e pepe, carbonara)

I think it's weird to compare a mild soft cheese to two sharp hard cheeses, especially given that the two hard cheeses have similar uses and the soft one is totally different.

I mean proper Mozz di Bufala is definitely the most delicious of these eaten on its own, but I couldn't imagine sprinkling that on pasta, and pasta would be sadder without the other two.

I have fond memories (and photos) of eating pecorino under the Palatine Gate in Turin, from the big market right there, just biting off chunks off the big morceau we'd bought.
