Pecorino v Parmigiano v Mozzarella

pecorino toscano is also very good - like a manchego

voted Parmigiano and already regretting since I was just reminded of the excellent margarita slice with fresh buffalo mozzarella I had a few weeks ago

and the caprese I made with fresh tomatoes and not even buffalo just regular mozzarella

but parmesan is so great in so many dishes, in a way the best cheese of all

i really like mixing pecorino romano though - parmesan is no good for my favorite pastas (cacio e pepe, carbonara)

you wouldn't want to sprinkle pecorino romano on something that's already quite salty, like a caesar salad or a slice of pizza

I think it's weird to compare a mild soft cheese to two sharp hard cheeses, especially given that the two hard cheeses have similar uses and the soft one is totally different.

I voted parmesan but pecorino Romano is not that far behind. We don’t have much in France like those (fortunately we have lots of those!)

yeah France is probably tops, certainly quantity-wise, but Italy has a few exceptional knockouts

Not a choice, I could eat all three in the same meal.

I mean proper Mozz di Bufala is definitely the most delicious of these eaten on its own, but I couldn't imagine sprinkling that on pasta, and pasta would be sadder without the other two.

I've put it on pasta before because I am shameless. But the water content tends to make everything goopy.

I'd rather have the other two than mozzarella di bufala, but maybe I don't know the proper stuff as well as the more quotidien stuff?

I have fond memories (and photos) of eating pecorino under the Palatine Gate in Turin, from the big market right there, just biting off chunks off the big morceau we'd bought.

mozz just gets kind of lost on pasta, it's not terrible it's just a waste

on my honeymoon i went to puglia and one meal we had came with an appetizer that was literally just an enormous ball of fresh mozzarella on a plate and i was like a+ best restaurant ever

spent last week on the French side of the Italian border and enjoyed delicious pecorino romano so I voted for that. I think at this point I like sheep cheeses more than cow cheeses.

for eating on their own i also prefer sheep
