anyway on a serious note strikes me that ordering a margherita is akin to ordering a cucumber roll at a top sushi place - trying to get a feel for how they do the rice, assembly, etc. before moving on to the more serious stuff.

I judge a Mexican place by its cheese-only nachos. Sick of people ruining nachos by putting other tasty ingredients on them!!

Similarly, I like a good al pastor or chicken taco with maybe cilantro and salsa, but none of the extra other toppings that can turn Mexican into synonymous with sour cream and goo.

There's not often tomato sauce, cheese, basil, garlic & crust that are so much better on their own that you'd choose it over another option on the menu that expands on those ingredients with added detail.
If you can get it by the slice, it's a different story.

I also don't order basic pasta + sauce dishes at restaurants either. Very rarely do they justify $14.99, yet somehow they get away with charging that price at millions of boring Italian restaurants. However, there's a few places in the city that are very much worth it.

If you're in Naples, by all means order the margarita, preferably with bufala mozzarella. It will be the best pizza you've ever eaten. If you're at a place that throws tomato slices on a cheese pizza and calls that a margarita, avoid at all costs.

It's rare that I order anything other than margherita, it's definitely the yardstick, often the cheapest, often the best.

my only experience w/blue cheese + pizza was when i was on the east coast and you'd get these really doughy and soft giant pizzas and they'd come with a bowl of blue cheese on the side (usually you'd get some hot wings too) and you'd dip everything in that gunk.
