I am trying to only eat meat one meal a day now, so yeah, margherita pizza is becoming a more and more popular option at my house.

Move that it be hereon known as "plain" or "vanilla" or "unfinished" pizza tbh

Gary Synaesthesia (darraghmac), Monday, 6 November 2017 14:04 (six years ago) link

vanilla pizza, now there's a notion

i thought that basil was a basic ingredient of a margherita. without it, it's not really a margherita?

I pretty much always order a margherita at a fancy/snobby/aspirational pizza place - the kind that brags about their 00 flour and san marzano tomatoes and buffalo mozzeralla - to establish a baseline level of quality. I'd never order one from a delivery place.

joygoat, Monday, 6 November 2017 14:40 (six years ago) link

Seriously. It's the gold (white red green) standard. And yeah, it needs basil (green).

Josh in Chicago, Monday, 6 November 2017 14:45 (six years ago) link

Well I think this is pretty much settled so for your further entertainment here's the whole list of topping options:

Margherita
Vegetarian
chilli Beef
Ham & Mushroom
Lamb & Mint
Bacon & Brie
Grilled peppers & Haloumi
Pepperoni
Pesto & Pepper
BBQ Pulled Pork
BBQ Chicken
Blue cheese, rocket and Balsamic Glaze
Goats cheese and Red onion
Ham hock and Edam
Port salut and Peppardew peppers

Monogo doesn't socialise (ledge), Monday, 6 November 2017 14:46 (six years ago) link

Um, wow. Or yuck. Not sure I would trust anyone doing half of those with something as simple as Margherita.

Josh in Chicago, Monday, 6 November 2017 14:47 (six years ago) link

That is a hellscape of a menu

Gary Synaesthesia (darraghmac), Monday, 6 November 2017 14:47 (six years ago) link

Port salut and Peppardew peppers

is this a thing? not sure about this combination on or off pizza but would be willing to give it a go

Roberto Spiralli, Monday, 6 November 2017 14:50 (six years ago) link

this looks more like a selection of crisp flavours, and a p good one at that

Thirding this. If you can't make a delicious margherita, you shouldn't be in the biz.

It is the basic test of your cheese, your sauce and your crust. All three need to be on point.

honestly in terms of hellish pizza menus that doesn't really rank

if we're talking SLICES though, it is by far my most ordered slice and i love it, though usually i am adding chili flakes, oregano, parmesan.. so maybe i do not actually love it as much as i am saying i do

feel like if you're going thru the trouble of making a pizza, why not throw actual toppings on to increase the nutritional value. veggie pizza for me has, like, veggies on it.

1 margherita pizza is not "cheese pizza"
2 basil is an essential part of margherita pizza
3 margherita is one of the best pizzas, perhaps the most classic pizza, its simplicity is enhanced by ordering in addition another pizza that is perhaps more complex and intense in its ingredients, but the margherita pizza should always be consumed first
4 the best pizza is not available at a place that doesn't have a good margherita pizza

I think of "cheese" pizza as being more or less covered with cheese, barring the edge. Margherita has globs of fresh mozzarella that leave a lot of the fresh/chunk tomato sauce exposed.

Josh in Chicago, Monday, 6 November 2017 16:24 (six years ago) link

aha, thx for the clarification! xp

here's what I would pick off that menu, for a party

Margherita -- see thread

Pepperoni -- meat requirement

Blue cheese, rocket and Balsamic Glaze -- balsamic's too sweet usually but people love this

Port salut and Peppardew peppers -- this sounds amazing to me so idgaf if I'm the only one who eats it

i'll have a margherita but instead of tomato i'll have sauce and instead of fresh mozz i'll have the old stuff. also no wilty basil please

Italian Easter Pie (Pizza Gain, a.k.a. Pizza Rustica)

Also, pizza,

from Italian pizza, originally "cake, tart, pie," of uncertain origin

Josh in Chicago, Thursday, 9 November 2017 12:26 (six years ago) link

Largely, though, most Americans at that time had never heard of pizza. "If someone suggests a 'pizza pie' after the theater, don't think it is going to be a wedge of apple," wrote New York Herald Tribune food columnist Clementine Paddleford in 1939. "It is going to be the surprise of your life,... a nice stunt to surprise the visiting relatives, who will be heading East soon for the World's Fair. They come to be surprised, and pizza, pronounced 'peet-za,' will do the job brown."

Lots of great stuff here, I'm learning a lot!

josh i have gone through the etymology of this already! any rolled out dough is basically the same word: pizza, pasta, pita, pastry etc

don't know if "pie" quite makes the cut here tho

illegal economic migration (Tracer Hand), Thursday, 9 November 2017 12:59 (six years ago) link

Well, I did learn that it is largely an American thing, and that it (pizza or pizza pie) doesn't really enter the English vernacular until the 20th century, possibly a mishearing of "pizzapaia." As someone pointed out in that link, "The paia is the sound an Italian (maybe even Neapolitan or Sicilian) would reproduce seeing the letters in pie, those who were literate."

Anyway, pizza is not a pie. But I like all the etymological connections anyway.

Josh in Chicago, Thursday, 9 November 2017 13:04 (six years ago) link

in another, more accurate sense, there is nothing that is not a pie

Isn't that a circular reference? 'Pie gets used because of pizzapaia which comes about from Sicilians trying to say pie after they saw it written down about pizza'.

How about this for a cobbled together etymology? Almost all Italian American immigration is from the 'Two Sicilies' - effectively Naples and Sicily. When the round, Neapolitan, shape started to take hold and define what pizza was, the rectangular, Sicilian shape tried to claim it was just as good - literally 'pizza paia', or pizza equal. This became 'pie' in English to differentiate between the shapes and over the intervening years got (mistakenly) applied to both kinds. Sounds as plausible as anything else.

Thomas Gabriel Fischer does not endorse (aldo), Thursday, 9 November 2017 13:30 (six years ago) link

I don't know if it's circular so much as redundant, which sounds like just the sort of thing Americans at the turn of the century would do with this exotic Italian import.
