article is dumb too, basically sounds like any restaurant that isn't brand new/cutting-edge falls into the author's definition. E.g. in my old neighborhood he includes both a cheap Polish diner and a good but standard-issue French bistro.

my theory is when white ppl see the wontons come out splashed in red oil they feel scared but since its not actually spicy at all white ppl feel proud of themselves for being able to eat soemthing that looks spicy
