My understanding is that food in advertising is often doctored (sometimes to the point of not actually being the food advertised) so as to make the food in question appear as appetizing as possible. So I guess I don't understand why the food depicted in Taco Bell's breakfast advertising looks so much like tortilla-wrapped vom.

There's a restaurant nearby that made hash brown-wrapped omelets that were amazing but they stopped making them and I stopped going there. Because what kind of a decision is that even.

When I worked at Taco Bell, someone ordered an "ice taco" – a wheat tortilla filled with ice, and cheese sprinkled on top. Why hasn't Taco Bell tried to mainstream this???

I think that you could make non-gross versions of most of the Taco Bell breakfast items at home with basic cooking skills, and they would be far less greasy and overwhelming than what you get at Taco Bell and still be kinda greasy and overwhelming.
