i have two pizza cravings lately:

an "italian meats" pizza (soppressata, pancetta, prosciutto, maybe some fennel sausage) with a good, san marzano-based sauce and a nice thin blistery crust, none of that papa john's nonsense

sun-dried is better for pizza than regular tomatoes b/c of lack of water content. no one wants a waterlogged pizza. otoh, a little thinly sliced heirloom tomato can be lovely on a pizza.

I just think that tomato & tomato sauce flavours are too alike - they cancel each other out. Parm & mozz aren't and don't. (And I don't use parmesan on pizza anyways). But y'know, ymmv.
