I need to work on my curry game; they are not turning out as consistent as I'd like to. I cannot for the life of me do that thing where you heat the cream at the top of the can of coconut milk up and get the oil to separate from the solids! And I'm using rly good milk w/o emulsifiers, too.

Yes, when you do this before adding the curry paste, it creates a fat in which to fry the curry (which is a necessary step) instead of just simmering it in some liquid. You can use veg oil too but apparently this coconut cream separation thing is better.

Thanks, will give that a try. My curries are always homogenous goops, and if I add coconut milk I chuck in the whole tin at the end.

I have not been able to get my coconut cream to separate ever, maybe it's something to do with the canning. I usually just fry the curry paste in a little oil, then add the coconut cream until you get the green oil and go from there
