I need to work on my curry game; they are not turning out as consistent as I'd like to. I cannot for the life of me do that thing where you heat the cream at the top of the can of coconut milk up and get the oil to separate from the solids! And I'm using rly good milk w/o emulsifiers, too.

Yo! MTV La Tengo (Stevie D(eux)), Thursday, 17 January 2013 16:28 (eleven years ago) link

Why you do this?! Is this a necessary step?

ljubljana, Thursday, 17 January 2013 22:08 (eleven years ago) link

Yes, when you do this before adding the curry paste, it creates a fat in which to fry the curry (which is a necessary step) instead of just simmering it in some liquid. You can use veg oil too but apparently this coconut cream separation thing is better.

Yo! MTV La Tengo (Stevie D(eux)), Thursday, 17 January 2013 22:59 (eleven years ago) link

It also makes small flavorful pools of oil flout about your curry when it's done instead of just being a homogenous goop.

Yo! MTV La Tengo (Stevie D(eux)), Thursday, 17 January 2013 22:59 (eleven years ago) link

Thanks, will give that a try. My curries are always homogenous goops, and if I add coconut milk I chuck in the whole tin at the end.

ljubljana, Thursday, 17 January 2013 23:16 (eleven years ago) link

I have not been able to get my coconut cream to separate ever, maybe it's something to do with the canning. I usually just fry the curry paste in a little oil, then add the coconut cream until you get the green oil and go from there
