The nice thing about my annoying and/or selfish habits is they don't seem that way if I spend the entire day alone.

Lex, have you ever had a patient, cooking-skilled friend go through a few basic things with you, in your own kitchen?

Btw I never cooked rice till WmC shared that rice recipe a couple years ago on the cooking thread - it makes perfect rice and you can skip the saute bit at the start.

just1n3, Tuesday, 13 March 2012 23:09 (twelve years ago) link

no. i miiight be amenable to that but i don't really want to ask because a) i don't think it would end well b) i don't know what to ask or where to start.

lex pretend, Tuesday, 13 March 2012 23:30 (twelve years ago) link

man I should have really invited you over when you were last here

Sometimes my commute ends too quickly. Yesterday I was engrossed in a book so I stayed on to the end of the line and then rode back.

I miss doing this. I've taken to podcasting on buses in the past year which is just NOT the same thing and it's a bad habit. Music has taken over headphones at the gym where podcasts once ruled and thus books on the bus have been shoved to the side. Might be the solution to the lack of fiction I've read lately.

Xps just ask, and just be completely honest about your lack of skills. Cooking rice and pasta, sauteing veggies, marinating meats, boiling/steaming veggies, baking and pan-frying meat, roasting - these are all simple techniques that are (usually) easy to learn, and will provide you with many different kinds of meals. Get your friend to do each technique and explain why they are doing each piece of that technique. Then have them walk you through doing it yourself another time.

Just an idea! Also: alcohol should be involved in these lessons, if you think it'll help you not feel so pressured.

the glass of wine you drink while cooking is my favorite glass of wine

althea and (donna rouge), Tuesday, 13 March 2012 23:54 (twelve years ago) link

^^^ I'm drinking mine now (pouring my second)

Also, Lex, even though I learned to cook at a very young age, I hated it for years bc I had to cook most of the family meals from 12-18. I've only started to really get more into it bc I am fortunate enough to have a v appreciative audience - it has def inspired me to cook much more adventurously than I ever imagined possible.

If we all ever meet, let's do so at the Olive Garden in Times Square.

It would be a plus to find some 30-year-old culinary whiz who's into me.

I make spaghetti with Ragu Light sauce once a week.

hi cad! damn, you never know what topic's going to bring the nice straight boys into the thread.

my beans are v good, tho. always. i make a mean bean imho.

i think this is serious (elmo argonaut), Wednesday, 14 March 2012 14:38 (twelve years ago) link

What do you do? I just saute garlic and onion and pepper and then add the water and soaked black beans and a bay leaf and simmer for a bit

Joan Cusack clumsily running into a water fountain (Stevie D(eux)), Wednesday, 14 March 2012 14:47 (twelve years ago) link

i brown diced onions & jalapenos & minced garlic in a skillet, add tomato paste, adobo, cumin, cayenne, black pepper, let it get all nice and carmelized and sticky, and deglaze with red wine vinegar. add to simmering beans.

i think this is serious (elmo argonaut), Wednesday, 14 March 2012 14:53 (twelve years ago) link

always. be. deglazing.

i think this is serious (elmo argonaut), Wednesday, 14 March 2012 14:54 (twelve years ago) link

i hate bell peppers but you can use them instead, i guess.

i think this is serious (elmo argonaut), Wednesday, 14 March 2012 14:54 (twelve years ago) link

3hunn O))) (J0rdan S.), Wednesday, 14 March 2012 15:03 (twelve years ago) link

Exile in lolville (Alfred, Lord Sotosyn), Wednesday, 14 March 2012 15:06 (twelve years ago) link

i have never cooked dried beans before :/

althea and (donna rouge), Wednesday, 14 March 2012 15:20 (twelve years ago) link

i live right by some small thai and armenian grocery stores, i really need to start taking advantage of that

althea and (donna rouge), Wednesday, 14 March 2012 15:21 (twelve years ago) link

yeah i've never cooked dried beans before either, don't think i quite have the patience for that yet

3hunn O))) (J0rdan S.), Wednesday, 14 March 2012 15:22 (twelve years ago) link

it's... not hard.

i think this is serious (elmo argonaut), Wednesday, 14 March 2012 15:31 (twelve years ago) link

it just takes a bit of planning bcz you have to prepare the night before. Just sort, soak, and simmer!

Joan Cusack clumsily running into a water fountain (Stevie D(eux)), Wednesday, 14 March 2012 15:33 (twelve years ago) link

I still haven't mastered the art of pressure cooking. When Mom makes vats of black beans for Christmas Eve and see the little plastic tab at the top of the Hitachi going shhhhhh I get scared.

Exile in lolville (Alfred, Lord Sotosyn), Wednesday, 14 March 2012 15:34 (twelve years ago) link

lol usually when i have the desire to cook beans it's like i want these NOW and now TOMORROW

althea and (donna rouge), Wednesday, 14 March 2012 15:35 (twelve years ago) link

not*

althea and (donna rouge), Wednesday, 14 March 2012 15:35 (twelve years ago) link

Yeah, I'm far too much an impulse cooker. It was all I could do to make a big batch of noodle salad for my lunches this week.

Eric H., Wednesday, 14 March 2012 15:37 (twelve years ago) link

yeah i never know what i want to eat until...i want to eat it! i don't understand how i could plan meals a day or more in advance.

lex pretend, Wednesday, 14 March 2012 15:42 (twelve years ago) link

It would take considerable training to prepare something and then ... gulp ... NOT eat it.

Eric H., Wednesday, 14 March 2012 15:44 (twelve years ago) link

Is that where the glass of wine comes in?

Eric H., Wednesday, 14 March 2012 15:45 (twelve years ago) link

jeez it's just fuel, ppl

Literal Facepalms (Dr Morbius), Wednesday, 14 March 2012 15:45 (twelve years ago) link

you can cook dried benas without a pre-soak, it takes longer tho. also soaking beans allows them to start germinating so they release some of the enzymes that cause gas, so soaked beens are less fart-making. #protip #farts

i think this is serious (elmo argonaut), Wednesday, 14 March 2012 15:48 (twelve years ago) link

hmmmmm

farting is one of the best parts about eating beans

3hunn O))) (J0rdan S.), Wednesday, 14 March 2012 15:49 (twelve years ago) link

After all these years, I finally feel like I know you, J0rdan S.

Eric H., Wednesday, 14 March 2012 15:50 (twelve years ago) link

Literal Facepalms (Dr Morbius), Wednesday, 14 March 2012 15:56 (twelve years ago) link

I've had that thought before, and then I realized I was only being vain.

Eric H., Wednesday, 14 March 2012 15:57 (twelve years ago) link

you prob'ly think these vows are about you

Literal Facepalms (Dr Morbius), Wednesday, 14 March 2012 16:05 (twelve years ago) link

so soaked beens are less fart-making. #protip #farts

this is legit good to know

althea and (donna rouge), Wednesday, 14 March 2012 16:16 (twelve years ago) link

Yes, just make sure you drain and rinse them well after soaking.

Joan Cusack clumsily running into a water fountain (Stevie D(eux)), Wednesday, 14 March 2012 16:18 (twelve years ago) link

my family has always been into cooking dried beans, it's v common in lebanese cooking. we just made some lentils this wknd!
