the other one i am always trying to push on people who like manchego is zamorano which is pretty much manchego but not from la mancha, its got a subtly different flavor that i prefer

oh hell yeah. not necessarily in that order, but all these cheeses. think that this style of french/basque/spanish sheep's milk cheese is my favorite, at least for the raw nude eating of.

never had zamorano that i know of. will try.

petit basque is a small fist-sized orange barrel with a basket weave pattern

ossau iraty is a large wheel with a light gray natural rind

abbaye is similar except beige and with a white mold dusting
