my guess is you'd like the mid-period stuff the most from what you're saying - the period where they were no longer shameless American R&B copyists (really some of that early stuff is SO EGREGIOUS - sometimes good/great, sometimes awful) but before they'd morphed into blues-rock libertines, basically the period where most of their interesting ideas were coming from Brian Jones. Their psych phase is hilarious, but has lots of great tunes.

HSM is a goddamn silly record but it has some great stuff on it and is a wonderful mess

Shakey's recs are how I got into them and sidestepped some of the conclusions I'd drawn about them growing up with them as the biggest band on the planet. Maybe also check out "Street Fighting Man" if you like Gimme. Or just enjoy this, the version sung by the original version's "back-up" singer:
