I'm trying to figure out what Saint St. E stands for. Cause I can't think of any Saints what start with the letter E.

Besides, all of the good commonly used Saint names are already taken... St.John, St.Claire, St.Hubbins...

So how come they ain't got Saint Elmo in that list? Was he not a real saint, or a protestant saint?

Elmo's a contraction of Erasmus, but the St Elmo who lends his name to the fire and Rob Lowe movie is actually neither an Elmo nor a Saint. (He's a thirteenth century Dominican whose cult cropped up without his ever having actually been canonized.)
