not ones that taste like a parody of what truffles smell like
seriously, once you sour on truffle oil you can't even smell it w/o being vaguely grossed out
duck fat fries can eat a dick and not just 'cause I'm veggo, either. the idea of making great fries is not to infuse the highest fat content imaginable into them, the idea is to his this rich/light combo perfectly & then put some flavor on 'em that costs at least $1000 a grain. try my peruvian flake fries sometime, they are the bomb

you know, I was reading about weird cooking oils and people kept on mentioning rice bran oil as a great oil for deep frying as it imparts a 'lightness' to the final product. apparently japanese chefs love to fry up some tempura with it.
also, avocado oil is supposed to be good and has the highest smoke point of any oil ever. man some fries fried in avocado oil would be pretty good I bet.

I made some homemade fries using peanut oil. did the whole parboil first/high heat fry afterwards. they were good but I dunno if it was worth the effort. I deep fried a big mac afterwards using the oil. : |
