My countertops are too high for me, so I use the dining room table for kneading/rolling.

My kitchen has Corian counters so I just throw out lots of flour to avoid stickage.

yea i have done this a couple of times and just dust the countertop with flour, but as stated above you will produce a more 'rustic' looking version than what i imagine is possible using a pasta maker (having never used one). making a bunch might be tedious tho

a friend of mine does this and the raviloi are awesome. she makes them 'window' style or whatever it's called. basically a basil leaf is placed between two thin pieces of dough. you can see the basil leaf and obviously it adds flavor.

my friends made them but the dough ended up sticking together in the bowl so we had one big hunk of butternut squash ravioli.
might be easier to make ravioli-dumpings?

i've made pelmeni before, they're similar to ravioli but made from one folded piece of dough, i'm not sure how you'd get two to stay together. what's the trick?
