Be careful, Tracer. Friend of mine just got tendonitis from over-aggressive hand rolling of pasta.

I've made small batches w/ rolling pin, pizza cutter, and a fork. It's tough to get the dough evenly thin, but not too thin. Adding a little oil to the dough helps to keep it pliable, but can prevent it from sticking together properly at the edges.

Waxed paper top and bottom? Works great for pie crusts.

I haven't done this in ages but I once did it w/only a tomato paste can to cut out the ravs and made a goat cheese/spinach filling. It was pretty good. I buy hand-made ravioli from the local farmer's market and they're supposed to stay good, frozen, for several months.

I have a mat for kneading (for cheap at local restaurant supply place, has their logo on it. also - giant! like 2.5'x3.5') and I use Laurel's waxed paper suggestion for rolling out. (xpost)

My countertops are too high for me, so I use the dining room table for kneading/rolling.

My kitchen has Corian counters so I just throw out lots of flour to avoid stickage.

yea i have done this a couple of times and just dust the countertop with flour, but as stated above you will produce a more 'rustic' looking version than what i imagine is possible using a pasta maker (having never used one). making a bunch might be tedious tho

a friend of mine does this and the raviloi are awesome. she makes them 'window' style or whatever it's called. basically a basil leaf is placed between two thin pieces of dough. you can see the basil leaf and obviously it adds flavor.

so did you make them tracer hand? how was they?
― Anton Levain (jdchurchill), Friday, 5 February 2010 19:32 (fourteen years ago) link
my friends made them but the dough ended up sticking together in the bowl so we had one big hunk of butternut squash ravioli.
might be easier to make ravioli-dumpings?
