yeah the #1 cause of bad milk & coffee drinks is improperly foamed milk
the guy at the coffee shop I go to has been trying to teach me how to get that microtexture, it's difficult...he OTOH could probably do it blindfolded, as he says it's based on the sound of the steam wand thingy

Does keeping it in the freezer help? I thought that was pretty standard, freezing coffee -- either ground or whole bean.

Somewhere I read about about perfectly foamed milk being "the consistency of household paint" which is 100% OTM and is not the case 99.89% of the time.

but store-grinding a pound and keeping it in air-tight container is fine if you use it up fast enough imo? maybe u guys are too slowxpost you keep it in the freezer every day? i'm skeptical of u.

we buy one (usually pre ground) container a week, use it up in a week. keep it in the freezer.
i liked coffee before. you can't take the credit anyway.

Freezing Coffee - Not as Good as an Iced MochaSome people store their coffee in the freezer thinking it is going to keep the coffee fresh. Here are a couple of reasons why storing coffee in your freezer is a bad idea:
* Coffee is porous. This is a good thing for fans of flavored coffee as the beans absorb the coffee flavoring syrups and oils that are used to make flavored coffee. However, if given the chance, coffee can also absorb other things like the flavor of seafood or the moisture that your freezer produces. This moisture will in turn deteriorate the coffee and even make it taste like, well... like a freezer. * When coffee is roasted, the beans release their oils and essences to give the coffee its distinct flavor. You'll notice these oils are more prominent on dark-roasted coffee and espresso. When you break down these oils by freezing, you are removing the flavor.
Think about it...if coffee tasted better and fresher from the freezer, then you would buy it in the frozen food section, your local coffee shop might look more like an ice cream parlor, and our power bills would be through the roof trying to maintain a meat-locker the size of a warehouse.

Freezing or Refrigerating Coffee Beans - It is generally not recommended to store coffee beans in the freezer or refrigerator. The enemies of coffee are extreme temperatures (hot or cold), air, light, moisture, and strong odors. The freezer is acceptable only for a one-time shot. What this means, is that once you take it out of the freezer, it should never go back in. Condensation can form and adversely affect taste, as the frozen moisture on your coffee will melt and be absorbed into the bean, which deplete the flavorful oils.
i mean, i've never had a problem with it tasting stale and if i did i would alter my methods. i can give you names and addresses of people who have tasted my delicious coffee and you can interrogate them.

Freezing & Thawing: You don't thaw it out every time, you just scoop a little bit from the bag in the freezer and put it straight back in. It only freezes once.
Porosity: Good point, if you have a stinky freezer. Also a good reason to put the bag of coffee in a plastic bin, bag, however you normally store long-term frozen goods.
Oils: I don't know about this. Does freezing "break down" the "oils"? I'm asking, I don't know. But that clip doesn't offer any evidence that it does.
The last point, about storing ALL coffee in the freezer, is just...nonsensical. Coffee in a store or a warehouse has turnover -- if it didn't, and it sat on the shelf and got stale, you'd buy it somewhere else. But once you get it home, you're stuck with it. THAT'S the point at which freezing is useful.

look, these are trusted coffee experts saying these things. it doesn't take that long for a tiny amount of condensation to form, and the oils in coffee are water soluble iirc. freezing a pound of coffee you're going to keep moving in and out of the freezer (even for a few seconds) is dumb. you guys are dumb.

Yeah, well, we froze it because we had to drive an hour or more to buy anything besides what comes canned in the supermarket. It's a compromise. Also I still don't really believe them about the DASTARDLY CONDENSATION OH NOES.
