1: Sancocho

2: These blueberry truffles, but with pumpkin instead of blueberries. Okay, so not those blueberry truffles at all, but it's a good blueprint for couverture-less truffles in general. Hrm. Nix the blueberries and the wine, and substitute a quarter cup of pumpkin puree, that's my guess. Replace the pepper with cloves. I'll try this myself next time I have an open can of pumpkin puree.

3: Pumpkin panna cotta -- a cup of cream, some pumpkin, a spoon of sugar, a dash of spices, half a teaspoon of gelatin dissolved in a tablespoon of water, shazam. You probably would want to strain this, and maybe it might pay to simmer the cream and pumpkin together on very low heat for a while before adding the sugar and gelatin.

4: Curry!

5: There are a lot of West African stews similar to the sancocho, using pumpkin, peanut butter, and/or coconut milk as thickeners. You could use chunks of pumpkin, too, if you're thickening with the coconut or peanut butter.

6: Speaking of pumpkin chunks, I had a nice dish at a Thai restaurant the other day with chicken, chunks of pumpkin, papaya, pineapple, green peppers, and onions, with the usual sort of soy sauce/broth/cornstarch kind of sauce and a bunch of sriracha. The pumpkin was a little underdone in some chunks, so it probably pays to cut the chunks to as equal a size as possible.

I made an African stew a few years ago that involved preparing the stew on the stovetop while simultaneously cooking a cleaned-out pumpkin (with the lid put back on). Then when the pumpkin was cooked and the stew was ready (ideally at the same time), the stew was poured into the pumpkin for serving. When you went to scoop out some stew, you'd also scallop out some cooked pumpkin from the walls of the shell, so there'd be nice juicy chunks of cooked pumpkin in the stew. It was good. Plus it looks cool to serve a cooked pumpkin, take the lid off and have stew inside. I don't remember which stew recipe it was, but probably any West African stew would work.

thanks for the good ideas guys! there's a cake in the oven right now but i will get back to your stuff as there is a LOT of pumpkin left. so much. you wouldn't believe how much.

Well i would actually like a good pumpkin pie recipe actually. anyone, anyone? Also, I heard that the orange pumpkins that are used for halloween lanterns are pretty horrible & other types of pumpkin should be used, is this right?
