Smear a chopped pork fillet with garlic (a touch of salt) pounded within an inch of its life and mixed with a teaspoon of olive oil. Brown. Add a tin of tomatoes and a tin of chickpeas and some West indian Hot Sauce. Cook for about twenty minutes, add a splash of lemon juice, season and then dump in the same weight of spinach as the pork fillet. When it wilts, coriander leaves and serve with crusty bread.

Numm numm numm. And very easy.

A West indian Pepper Sauce can be substituted with a few flaked dried chillis, but yes - this is availible in all supermarkets I know of (by you are in Ireland so...) Tabasco would also work.

get a can of thai curry paste, a can of coconut milk, and whatever vegetables/meats you like. saute the paste with the coconut milk and cook with the other ingredients. voila.

Atkins is wack, by that diet's logic everybody in Japan would weigh 5,000 lbs. Also Thailand, China, etc.

Ronan there's a way that people make potatos in upstate NY that's quite delicious v. plain comfort food. You skin the potatos, then boil the hell out of them in a solution that's half water, half milk, and like a full quarter-cup of salt (or more, even!). These way salty potatos will make you feel very warm and loved.

Jess however cannot eat them.

I have a package of chicken, tortellini, and sundrieds from TJ's (it's been sitting in the fridge for a week and I forgot I'd even bought it -- hope it's still good), and some leftover fresh basil. Tomorrow night I'm gonna get a couple cans of pureed tomato, throw the whole mess together, heat it up, and call it soup.
