Would have to know more about the details, but just generally (1) If you're doing something free for a celebrity for the "publicity" it seems kind of implied that they might reject it if it's not up to their subjective standards and (2) if you're really concerned about getting paid, have a contract

I mean I don't see it as being that different from "Hey, write me a song for my movie." If you're doing it for money, you say "ok, how much will you pay me for a song" or "I will charge you $x for a song." If you don't do that, and you're doing it for the "publicity" it's kind of common sense that your song might not make it in the movie AND you might not get paid.
