So much to catch up on.

On Ramen, dipping is definitely the way to go so tsukumen for me. Although faced with the choice between ramen and good soba, then soba every time. Good soba has to be high buckwheat content or what’s the point.

I don’t really eat rice at hope due to low carb dieting but, in China or Japan I eat much more and love it. On my most recent trip I ate more brown rice and rice and beans than I have before. Japanese rice and beans or the Taiwanese/Japanese rice with beans and grains like sorghum is wonderful. Ochazuke and bubazuke ftw, btw.

I will defend trifle to the death but it has to be well made, lots of booze, fruit and ridiculously rich custard. If you are going to chill custard then it needs to be slightly over sweet when warm. Jam in the trifle sponges. Jelly does not belong in Trifle, why would you spoil something so wonderful with flavourless plastic.

On the cake question - of course no ice cream with cake or cream for that matter, cake ought to stand up on its own. Custard, ice cream and cream belong with pies and tarts.

yeah I think I've had really good steak like one time ever, and it's not for lack of trying (or spending). & it was at a professor's house, not even at a resto! ok maybe once at a resto in Marseille.

I like meat "in" things but not really as a main dish.

Overcooked meat is as bad as past al dente pasta for me. I think I like most of my food on the way undercooked to raw side.

All of rice is disgusting. There is no saving it. Although I do like rice pudding. I used to eat uncooked oatmeal as a kid with just a little milk.

American link sausages are likely bastardized versions of italian, polish, german etc. And then those weird sausages that they put in a spiral with skewers keeping them together so you can put it on the grill? I think there is a word for those?

ok I don't know those, maybe it's an east coast thing? the sausage I got in the dumb midwest was generally as on par with what I get in central Europe. (I don't think French sausage types really exist in the usa, just maybe louisiana versions which are quite their own thing)

I think these are basically Italian? I mean the quality depends on the meatcutter or company that made them but generally I think the spiral form is an Italian thing.

Tell you what - I've never been to the USA, but I spent most of my adulthood in China, and very familiar with the few overpriced western grocery stores in major cities which only had US stuff, a little Australian, maybe a few French things, never anything from the UK. The sausages and bacon were always pre-cooked. Literally was unable to buy raw bacon or sausages at all. Is this a refrigeration / transport issue or are these things generally pre-cooked?
