This one is sort of obvious when you think of spanikopita and other Mediterranean dishes, but the brilliance of it was really put into perspective for me the other day, when I was scrounging around in my fridge for a snack and put a bit of feta on a spinach leaf and rolled it up. Only those two ingredients, and it tasted fantastic.
