Hard for me to do because I find it hard to objectively rank favorite bands cross genre. but I'll try...
Immolation
Death metal, but this act is one where, upon releasing a new album, I'm buying it on day one.
They have a very unique style, they aren't about balls to the wall riffing, but they create a very bleak atmosphere by creatively using dissonance, odd harmonics, and layers.
Certainly, they've stuck to their niche their entire career, but why not if you're good at it?
Pain of Salvation
The second act coulda been really one of 234, but this group has always managed to write music that is both challenging, emotionally engaging, and memorable at the same time.
Unfortunately, listening to The Perfect Element too much has burnt me out almost permanently on the album.

How Ashlee says "ruuuule breaker" sounds a lot like McCartney saying "aaaaaah mater" in "Jet" by Wings. (For whatever its worth, I heard maybe six songs from the new Ashlee in the Billboard offices back in December, and this was probably one of my favorites.)

I like Doctor Casino's argument (end of 90s vs. start of 00s) and the suggestion of things by Stone Temple Pilots and Barenaked Ladies, though I've never heard the songs in question. STP and the Ladies could only have existed in the 90s, and can be viewed as self-limiting mechanisms: inevitable yet toxic byproducts of the decade.
