Let's be honest - fried are more delicious however I usually order steamed in an attempt to be somewhat healthy.

tbh i can't pick. both of kinds of DUMPLINGS! are great. if i'm only getting one order i'll pick steamed but if i'm making them or ordering several plates then i will order both steamed DUMPLINGS! and fried DUMPLINGS!

imo steamed DUMPLINGS! are a sad reminder of how much yum you could be having if you'd had frie(n)d DUMPLINGS!

we keep getting the trader joe DUMPLINGS! but their directions fuck them up -- i have no idea what to do about this.

saute them in oil, very lightly for maybe 6 minutes. then add water, 1/2 cup or more depending on how many, cover and cook for another 8-10 minutes

actually maybe medium heat for the saute

see i find with the tj's DUMPLINGS! you must saute them pretty aggressively for a couple mins to get the bottom to brown, but yeah, from there you need just enough water and heat to simmer and another 6-8 minutes of cooking time.

right, this is the thing -- i feel like they get too soggy in the water step, and that maybe more aggressive sauteeing -- or even frying -- might be better?

yeah i put the stove on 7 or 8 (laaame electric stove) and let the oil heat up quite a bit before dropping them in. also just a couple tbsp of water works fine.

par steam then fry - just a suggestion - have no experience w/these particular DUMPLINGS!

i like frozen DUMPLINGS!! from the chinese store--steam 'n' eat

ya i've never had TJ DUMPLINGS! but on the occassions that i have bought frozen DUMPLINGS!, found it best to steam them a little (just a little to soften them up - otherwise they fall apart), then pan fry them. oil needs to be pretty hot

Good innovation, would try, text says it's Chongqing, everything I ate there was really spicy, not sure if this would apply to DUMPLINGS!. Text also says these are "xiaolongbao" which reminds me I wrote this thing over a decade ago on "what counts as a dumpling?"
