"one album by ____ only" makes no sense unless there's some serious musical/heaviosity difference between that album and the rest of the artist's catalog. which there definitely isn't with the Stones, it's just arbitary. all or nothing, man.

I feel like the 'anti-rolling stone' thing is kind of a misnomer - these polls to me have been about 'music that rocks' in a kind of Joe Carducci-via-Chuck Eddy kind of way, in opposition to stuff that doesn't really rock although it might feature guitars or other signifiers of rock music (Rudipherous explained all this better upthread iirc).
