The turkey has just gone into my oven. The neck and giblets are simmering to make stock for the gravy. My guests are due at 5pm. I haven't had this much "free" time for several weeks, and am not sure what to do with myself while dinner cooks.

since we’re not having anyone over we felt like turkey was a bit much so we bought some ribeye steaks. pretty sure i’m going to do this every year now tbh. the steaks that is, not the not having people over. london is usually a neat place to do thanksgiving because you get to invite other americans over that you maybe don’t see enough of. i did it up anyway though, just with smaller portions. cranberry relish, mashed butternut sqash, cornbread, wild rice, the aforementioned ribeye, and i made fuckin lava cakes for dessert. AND PUT IN A DAY’S WORK TOO.

I knew in advance that there would be a very high demand for small-sized turkeys this year. My wife wanted to have a turkey for just the two of us, for the delight of having many leftovers and some delicious dishes that use leftover turkey.
We ordered online, selecting a "12 lb. or thereabouts" sized bird. When we came to pick it up, the nearest size they had was almost 18 lbs. Our roasting pan was barely big enough. My wife shall have her wish for leftovers come true. Including braised Brussels sprouts, delicata squash, saute'd zucchini w/ mushrooms, wine, and pumpkin custard.

Taking a break here! So we preordered in a full precooked turkey and in the past six hours I broke it down and made stock. Separated out some stock, cooled up mirepoix and simmered it and a batch of the turkey to create a lot of soup for freezing. Then there's whatever turkey we have over the next couple of days and the rest I'm going to cube or shred and freeze. (The shredded turkey I have plans for -- creating a chili from scratch later in colder months.) And that leaves turkey for tonight, with a quick prep of spicy green beans later, and everything we ordered in yesterday we just heat up and eat (gravy, cranberry chutney, stuffing, roasted potatoes and brussel sprouts -- and a small Dutch crunch apple pie). Meanwhile the turkey carcass is already in the outside trash and the kitchen is cleaned up. It’s like I’ve achieved Thanksgiving satori.

Sides are where it's at so I just got a small boneless turkey breast. Sliced and heated in the gravy, it's an afterthought to the cornbread dressing (tried to recreate my mom's recipe, result was a B or B-) and grated-not-mashed sweet potato casserole (ditto, A++), creamed corn, peas, rolls, etc.

We did the annual Tofurky (sorely underrated) with roasted vegetables and a mushroom rosemary gravy, and a (lemon fennel) cranberry sauce for the first time.
Got some pics from a friend who did the entire ridiculous feast for two people (including two pies and a turkey from restaurants, everything else home-made). Can't imagine facing that down.
