if chili garlic sauce = sambal then that one forever. i like sriracha but am not gaga. chile garlic sauce, to me, is the ideal hot sauce for homemade falafel so is indispensable

chili garlic sauce has a harsh flavor to me. sambal oelek made by the same company is much better I think. I love sriracha

Huy Fong Foods was founded by David Tran (born 1945), a Chinese-Vietnamese businessman of Teochew descent, and a former Major in the Army of the Republic of Vietnam.[5] Tran fled the country in 1978 in a cargo boat and arrived in Hong Kong.[6] Then he arrived in Boston in the spring of 1979 as a part of the migration of the Vietnamese boat people following the Vietnam War.[7] Shortly after arriving in Boston, Tran called up his brother-in-law in Los Angeles, and decided to move there after learning that there were red peppers.[8]

This confirms what I recall reading a while back:

In June 2022, Huy Fong Foods announced that they would be pausing production of its popular Sriracha Hot Chili Sauce, due to a “severe shortage” of chili peppers.

Not sure if they've resumed production, yet.

There are several different brands making sriracha, ranging from pretty good to awful. You can spot the worst ones because they say "no MSG"

chili garlic seemed to me to be a little more liquidy than sambal as well as a little less spicy… but with the added bonus of garlic!

I used to liberally use my friend's sriracha sauce when I'd house sit, and he had the Huy Fong brand. weirdly I had just assumed that's the type of packaging most sriracha came in, without realizing it was just the most famous (well, to us) brand.

Thai Dragon is HORRIBLE, this is the one with the "Free From MSG" label 1/10
Uni-Eagle is just about ok, 5/10
Flying Goose is acceptable, maybe 6.5/10

if any of you ever have occasion to pick up some of this, highly recommend - it's a local farm's sriracha here in Western Mass. Kicks the shit out of Huy Fong, which I do also love
