overarching themes don't have to be consciously constructed by the writer, the reader draws them out.
Personally I'm not interested in engaging in a work that doesn't have anything to say - where I can't detect any ideas to keep me engaged or interested - where there's just this empty formal exercise going on.

Fans could put any number of overarching themes on Game Of Thrones.
I very much doubt anyone could find a convincing overarching theme for everything they love. They generally end up so vague and general as to be useless.
And it depends what you mean by "something to say" because I generally prefer things that don't have a very deliberate thing to say.

I probably wouldn't find most of the takes convincing or at all useful.
I often find that when people try to describe these type of big ideas behind their favorite thing, they come across a bit dishonest, like they're flattering themselves and describing something very different to the thing they actually enjoyed. Although the big theme doesn't necessarily have to be the thing they enjoyed about it.
