"Fuck the bloom. I'm going to pour over the god damn freshly ground Kenya AA in my Chemex right to rim. Stop me."
Good God man.
― Coffee Bob, Wednesday, 7 March 2018 19:03 (eight years ago)
the bloom
i respect it
but it could be bullshit huh
― marcos, Wednesday, 7 March 2018 19:24 (eight years ago)
You can perceive with your eyeballs that it isn’t bullshit! The coffee visibly foams up and subsides when you bloom it.

Burnt umber

It probably depends on the grind and freshness. I've got my conical burrs set just larger than espresso powder, so the grinds de-gas rather quickly once immersed in hot water. By the time I've poured over to the half way mark, there are no more bubbles. I'm also not drinking $20/lb coffee fresh from a roaster, my beans have spent a few months in nitrogen purged packaging, and have already degassed a bit.
Waiting for a bloom strikes me as a gratuitous ritual, on a par with swirling then tossing vermouth from a martini glass. If it does make a difference, its rather minor compared to bean, roast, grind, and brew method. It's on the order of those who break out digital thermometers to ensure their brew water is exactly 205 F (96 C), rather than pretty darn close. I've bloomed (as the Chemex instructions suggest), I've just slowly poured over for a couple minutes, and I couldn't taste the difference.

Coffee is a gratuitous ritual, that’s why it’s fun.
― valorous wokelord (silby), Wednesday, 7 March 2018 22:41 (eight years ago)
cautionary tale - drink un-bloomed coffee even once and your palate may be as ruined as sanpaku's is
― the late great, Wednesday, 7 March 2018 23:01 (eight years ago)
also not drinking $20/lb coffee fresh from a roaster

ruined acutely aware of the law of diminishing returns.
― Free Stormy Daniels (Sanpaku), Wednesday, 7 March 2018 23:52 (eight years ago)
flopson: for pour over coffee, one blooms by pouring brew water 1:1 with grounds and waiting 30-60 seconds until the bubbles stop coming off. This supposedly permits carbon dioxide still caught in the grounds to escape, and pre-wets the grounds, so that they're all brewing for about the same time when one adds the rest of the brew water later. But really, its just an excuse to hover over the coffee basket at the most aromatic part of the brewing process.

xp- oh cool i already do that w my HARIO cuz the guy who sold it to me told me to do that
― flopson, Thursday, 8 March 2018 00:09 (eight years ago)
the bloom is such an easy thing to manage it take like 30 extra seconds and pays dividends if u dont believe me do a taste test, obvs as mentioned up thread its more important if youre doing freshies
― lag∞n, Thursday, 8 March 2018 00:19 (eight years ago)
the reason he told me to do it wasn't about bloom or bubbles he just said to wait after the first pour so that it would kind of solidify and so it wouldn't all stick to the sides in subsequent pours, but it's good that it's also got the bloom rationale
― flopson, Thursday, 8 March 2018 00:22 (eight years ago)

i spend too much on coffee to take my chances with 204° or 206° water

It’s weird how flops calls people by the generic “joe” instead of people’s real life ilxor names

tbf I don't care for pour-over myself. Also I think chemexes are ugly and impractical*folds arms* (truth: i am hella clumsy. filling a giant glass vase with hot water and coffee in my proximity is a recipe for disaster, bloom or no)
― Squeaky Fromage (VegemiteGrrl), Thursday, 8 March 2018 01:04 (eight years ago)
wow i've heard a lot of things about chemex but never ugly!
― the late great, Thursday, 8 March 2018 01:06 (eight years ago)
chemex r sexi
― flopson, Thursday, 8 March 2018 01:13 (eight years ago)
that wooden collar with the leather thong and the wooden beads, it reminds me of gross 70's decor, like macrame potplant holders etc
― Squeaky Fromage (VegemiteGrrl), Thursday, 8 March 2018 01:23 (eight years ago)
its def super 70s but most ppl like that about it

Last weekend I was making a cup of instant coffee but I reached for the wrong thing and wound up taking a big swig of watery instant gravy with milk.

This cautionary tale is true but I posted it mainly to see how many FPs I get considering how many wrong things are in there.

i like that you really went all the way with it
― lag∞n, Thursday, 8 March 2018 02:03 (eight years ago)
I was so asleep still. I vaguely remember thinking it smelled weird but shrugging it off and just chugging it and then spitting it out projectile cartoon style into the sink.
― Benson and the Jets (ENBB), Thursday, 8 March 2018 02:06 (eight years ago)
drinking something thats not what you think it is is truly one of the most shocking and disconcerting experiences

Yes!!
I think this is why clear Pepsi was so weird and wrong. It confused people’s brains too much.
― Benson and the Jets (ENBB), Thursday, 8 March 2018 02:12 (eight years ago)
My brother in law drank an entire teacup of fish sauce thinking it was he’d forgotten. I’ve never seen a look of betrayal like the one he made afterward.
― rb (soda), Thursday, 8 March 2018 02:12 (eight years ago)
Flopson, that bonavita is very similar to my Oxo Barista Brain that produced the swell cuppa joe I had this morning. Since I switched, my wife has been using the Chemex to brew tea sans wooden collar.
