It probably depends on the grind and freshness. I've got my conical burrs set just larger than espresso powder, so the grinds de-gas rather quickly once immersed in hot water. By the time I've poured over to the half way mark, there are no more bubbles. I'm also not drinking $20/lb coffee fresh from a roaster, my beans have spent a few months in nitrogen purged packaging, and have already degassed a bit.

Waiting for a bloom strikes me as a gratuitous ritual, on a par with swirling then tossing vermouth from a martini glass. If it does make a difference, its rather minor compared to bean, roast, grind, and brew method. It's on the order of those who break out digital thermometers to ensure their brew water is exactly 205 F (96 C), rather than pretty darn close. I've bloomed (as the Chemex instructions suggest), I've just slowly poured over for a couple minutes, and I couldn't taste the difference.

flopson: for pour over coffee, one blooms by pouring brew water 1:1 with grounds and waiting 30-60 seconds until the bubbles stop coming off. This supposedly permits carbon dioxide still caught in the grounds to escape, and pre-wets the grounds, so that they're all brewing for about the same time when one adds the rest of the brew water later. But really, its just an excuse to hover over the coffee basket at the most aromatic part of the brewing process.

the reason he told me to do it wasn't about bloom or bubbles he just said to wait after the first pour so that it would kind of solidify and so it wouldn't all stick to the sides in subsequent pours, but it's good that it's also got the bloom rationale
