coffee snob opinion: there is no good south american coffee, only central american

silly opinion. Colombia has the most reliably good mass-market coffee, and has some nice small-lot coffee too, and I've had really good coffees from Bolivia and Peru as well. Not a fan of Brazilian coffee though.

otm. there's some good news out of Central America, too. Starbucks' Casi Cielo is p. reliably good morning coffee. In other news, an Intelligentsia opened up right near my house. It is nice to have a fancy coffee shop nearby, and the staff are knowledgable/friendly, but (a) why did they have to install modernist entirely minimalist furniture and (b) they don't heat up either their Chemex pots or the little pitchers into which they, like, decant the coffee, so that by the time the coffee makes it into your (also) unheated mug, it is just a degree over room temperature.

I've been out of Chemex filters and there's one coffee shop around here that has them so I've been using my old Aeropress. Getting dialed in pretty well w/ 18g coffee, 210-220g water @ 203 and two minutes inverted.

I am trying to limit my coffee spending. I now keep three coffees in the house, but only one of them is fancy.

1) Cafe Bustelo for before work on the days I feel like using the Moka pot
2) Something good(ish) for the Chemex. I like Dave's Fresh Coffee from Rhode Island, and not only because the graphic design is swanky.
3) Decaf Illy from a little tin can that I make in the Aeropress

having a chemex or whatever then filling it w all diff sizes grounds is living life backwards, consistent grind is so key otherwise yr coffee is not brewing evenly youre getting some under extracted and some over extracted and thats just not right

the thing abt the chemex imo is although it makes a real nice clean cup cause of the thick filter, the concept of storing multiple cups of coffee in it is flawed because the coffee gets cold, shd really be double walled IMHO, i have an insulated french press btw

I have a chemex but I use a plastic Hario v60 90% of the time bc it’s easier to brew one cup in it. Chemex is for sharing.

It's a bit pricey, but I highly recommend this burr grinder. Being able to store your beans in it and set the exact amount and courseness is super sweet. I love this thing.
