I've had a "Cuban" latte involving raw sugar packed with the grounds, and steamed coconut milk. I'm not usually a fan of the latte style but it was pretty darn nice.Tiny dollop of coconut cream maybe? or regular actual cream instead of whatever abomination Americans mean when they ask "cream or sugar?"

For years I only drank coffee with half and half or espresso with milk foam (ie. cappuccino or macchiato). My brother who works in the coffee business always gave me a hard time about it. I decided to try forgoing the dairy, and it was surprisingly easier than I thought it would be. You do realize how many nuances of the flavor you were missing before.

This is why I like the macchiato - a tiny dab of foam as an emollient to give a different flavour structure, and the rest of the coffee to express its native flavours. Best of both. The latte, flat white, cappuccino et al. can go to hell. Likewise sugar can alter the flavour balance, something to do with how we perceive taste, but I very rarely use it except to sometimes pack brown sugar in with the ground coffee when firing up the Gaggia, you get a dark caramel thing going on and it changes what flavours come out of the grounds, recommend if you have a home espresso thing.

I like almond milk fine! It's less creamy than dairy and doesn't add that silky mouth-feel but I actually think the nutty flavor is a better complement to the coffee taste.
