i think one of the big reasons is that it brews at a higher temp than most drip machines. i attended a 3-hour lecture/tasting with george howell recently and they brewed everything on a bonavita

I use my Chemex with the Bonavita, the showerhead is perfect for a 6-8 cup Chemex and I don't have to stand there pouring on top of a scale.

I highly recommend the glass handle Chemex over the classic wooden collar, if anyone's in the market. The leather straps on the wooden collar Chemex never seem to re-tie as nicely as they are originally when you clean it.

I make Chemex coffee every day. It is the best. My rules:
Pour 450 ml water into electric kettle. Turn on kettle. Put new filter in Chemex potRinse filter in hot water from sink until it is all wet and suctiony and the Chemex pot is hotPour out water, making sure filter stays in place Add 4 tablespoons / 27 g medium roast coffee ground a bit coarser than medium Shake Chemex a bit to flatten the groundAdd orange peel and cardamom if you likeGently pour over the grounds 100ml of the water from the kettle that stopped boiling about a minute ago Wait for a minute. Continue adding all the water, soaking the grounds evenly, in any number of incremental little pours during the next 2-3 minutes, making sure you don't let the grounds dry out too much in between poursPour into a mug and spill that thing all over your shoesStop at Dunkin Donuts and drink a paper cup of their bogwater.

I do flash-iced most of the time so 500ml of water to 47g of beans with a handful of ice in the carafe and ice in the pint glass or thermos I'm drinking from, which gets me to about 750ml of water total.

My favorite is the Bonavita immersion dripper when I'm not doing the Chemex/Bonavita - looks like a V60 or wave, but you pour the water in and then push a bar to release it once it has steeped.

It's ceramic so if you preheat with hot water it retains the heat well for a 3-4 minute steep
i have had to stop the cof because it wasn't good for my anxiety.
