I don’t even drink coffee but after seeing an espresso shot get pulled through a naked portafilter on an espresso machine, it’s the only thing I want in my life. How anal is the ILX cof brigade about bean age? Espresso beans are 'good' from 3-10 days, pourover within a week or two, etc. if you listen to the coffee version of audiophile forums.
I'm getting lazy, esp. now that I've embraced the Chemex and I'm pretty sure that I can't tell much of a difference between one week and one month on beans, if not longer.

after asking that I just realized that my beans in the kitchen are all very recent (or were frozen within 2-3 days of roasting when I get a giant bag) since I've gone Chemex over espresso. 2 x 35-40g/daily runs through a bag at a rapid pace vs the 1-2 x 18g semi-daily (since some days I didn't have time to wait for the machine to heat and all that).

It seems like lighter roasts don't keep as long. There seems to be a drop off after a few weeks. My brother who's a coffee buyer came to town a few weeks ago and left behind several freshly-roasted bags he had gotten as samples. Unfortunately I don't go through it fast enough, since I only make coffee at home on weekends, so I had to freeze a bunch of it and hope it will still be good later.

ugh i was a month and a half behind on this thread but now i am caught up and i have so much to say
just made some gr8 japanese style iced cof this morn w/ my kalita wave and some ethiopian, it's v blueberry and great, def livin that #sweetcoflyfe rn. still haven't fucked w/ cold brew bcz it takes so much cof and the japanese method tastes so great, why bother?
my bf has gone cof crazy, loves variety, and insists that we keep at least 2 (but usu 3) diff cofs in the house at all times, rn we got 2 great local blends and the aforementioned ethio, totally not complaining
my new work sitch = no kitchen, so my aeropress has become unwieldy now that i have to go a bit of a distance to the bathroom to clean it out :( it's enough of a PITA that i just never use my aeropress @ work anymore. they have a keurig machine and i tried to do some research on decent kcups for when i'm lazy, but everyone's unianimous top pick (green mtn kenyan aa) has been reformulated and like sucks now or something. i just picked up a contigo so i can make cof at home and bring it, or get it to go from a cof shop and throw it in my bag
also i work near not one but two count em two great 3rd wave cof shops now. one has SPARKLING ICED COFFEE, i have not tried this yet and it sounds disgusting but i am too intrigued not to try it

I use a chamber vacuum to seal the coffee in 8-12oz portions and defrost still in the bag. Totes indistinguishable, I've never understood what serious eats did differently - might have been a lack of vacuum sealing or something.

just a fad that allows for artisanal/organic overcharging. it has the advantage of being cold w/out ice watering it down, but cold-brew already does that. no noticeable taste difference either

well, what i've seen is cold brewed nitrogenated. so that makes it inherently more expensive. had it a couple times and i kinda love it. as with nitro-beer, nitro gives a lighter texture, not supposed to be a flavor thing, imho
