my water heater goes up in increments. the closest i can get is 200 degrees for the "french press" setting. my friend told me that i will not be able to "taste the beans" this way.

With my electric kettle I've found the best result is just to let it hit boil and switch off, pop open the lid, and let steam come out for like 60 seconds, or alternatively just let it sit closed for like 3-4 mins. Erring on the side of not hot enough seems to produce less bad results than erring on the side of too hot.

that's what i was doing but i would always get distracted during cooling and then it would get too cool and i'd have to reboil again. what's nice about this kettle is it just holds the temperature for you. my coffee isn't necessarily tasting much better but it's a much easier and quicker process now.

xp yeah that's a problem with chemex. i find leaving the filter with the grounds in on top helps retain heat, sometimes when it's cold i wrap it in a warm, wet dishcloth (not very aesthetically pleasing)

make sure you empty the bonavita whenever you're done using it and leave the top off. Had one for tea and it's brilliant but rusts super easily.

I had a Toddy, but it's easier (for me) to just brew in a big mason jar and then pour through a chemex filter. no chance at clumping, etc.
