My costco stopped carrying my starbucks via and I ran out of them, so I bought some Irving Farm coffee beans AT THE FUCKING AIRPORT on the way home from a work trip which is the lamest thing ever. Anyway it wasn't that good, nothing special.

Mail ordering beans is surprisingly cost effective. Fresh roasted from Intelligentsia or similar costs less per pound than buying from Whole Foods or the local shops/roasters I've found, plus they're almost always fresher. When I get Intelligentsia, the roasted on date is usually the day before I order and they arrive two days after that via Priority Mail.

I was trying to search for this but couldn't find anything - is there any real evidence that beans roasted x days before grinding and brewing are better and that there's a rapid decline at some point?
Like with espresso everyone claims that ~4-10 days is imperative, but having access to beans that freshly roasted is new and I still see a lot of European espresso brands selling bagged beans roasted months ago or even ground espresso.

Espresso beans are generally just a kind of blend (rather than single source or whatever) from what I understand, most shops I've looked at list multiple forms of brewing instruction for 'espresso beans' - pourover, Aeropress, etc.

"Espresso beans" doesn't even really mean anything. There's "espresso roast" which is basically just a dark roast. Espresso can be a blend or single origin though and pretty much anywhere from medium to dark roast.

basically just means that the roaster, when roasting/picking beans/sticking his nose into a freshly pulled shot while inhaling deeply and gazing into the sunset as his beard glistens, was aiming for something that tasted best when it was extracted quickly under high pressure. It'll prob taste just fine brewed in another way, but that isn't what it was blended/roasted/chosen for. No big deal, but not arbitrary either. This, of course, assumes that the roaster is someone whose palette you trust or agree with, or if you think having a palette is a real thing in the first place.
