Stevie a lot of central African coffees have similar characteristics you're getting from the Ethiopian coffee, so definitely dig into Kenyan coffees. And there are so many great Ethiopian coffees out there, though finding something fantastic is as dependent on roaster as origin. For US roasters I'm super impressed with Heart and Blueprint at the moment, and Intelligentsia's quality control and consistency are fantastic.

Beautiful.

I'm drinking an iced latte from my new favorite place to eat near my work (because you can order and pay online, and then sidle in and snatch your lunch off a shelf without ever having to wait in line or interact with anyone) and this is my first fully caffeinated coffee beverage in a couple of years (I've been easing into it with half caf beverages or iced tea). This should be interesting.

To a large extent, sure. It's also rarely the sole reason for a drinking or purchasing decision. Would you buy a wine knowing only where the grapes had been planted and say you knew what you were buying?

Coffee origins won't tell you everything about a coffee but they're a very good indicator of overall taste profiles due to cultivars, climate, growing methods, etc! A Sidama coffee from one roaster will almost certainly taste more like a Sidama coffee from another roaster than a Matagalpa coffee from the same one.
