pineapple on pizza

i basically don't trust anyone's opinion on pizza if they're not from (a) naples (b) along the metro-north.

THE FEZ PIZZA WAS THE BEST OF ALL TIMES. Apple, Gorgonzola, red onion, Canadian bacon, and honey. And red sauce. COME BACK, FEZ PIZZA. I LOVE YOU!

an "italian meats" pizza (soppressata, pancetta, prosciutto, maybe some fennel sausage) with a good, san marzano-based sauce and a nice thin blistery crust, none of that papa john's nonsense

new haven-style clam pizza, with just a little grated cheese or some housemade ricotta sprinkled on

can you put orange or strawberry or mango on a pizza?

Pineapple on pizza is just fine. Sun-dried tomatoes are inexplicable to me - aren't they kinda redundant?

I don't always want pineapple on a pizza, but sometimes I do and I don't feel like a savage.

people put regular non-sun-dried tomatoes on pizza and it's not weird, sun-dried is always a good idea tho

sun-dried is better for pizza than regular tomatoes b/c of lack of water content. no one wants a waterlogged pizza. otoh, a little thinly sliced heirloom tomato can be lovely on a pizza.

I just think that tomato & tomato sauce flavours are too alike - they cancel each other out. Parm & mozz aren't and don't. (And I don't use parmesan on pizza anyways). But y'know, ymmv.

recall some great pizza fights of yesteryear where the thought of rocket lettuce or shellfish on pizza was riot-clowned. well here's yr latest update: they're still great toppings. pineapple is one of the few things I find genuinely disgusting to sink my teeth into alongside the crisp crunch and cheesy give of a pizza. but then america is a nation of deep-pan grossness, not pizza
