Depending on where flax seed fits into your approach to eating atm, this is pretty great for breakfast and feels satisfyingly carby, especially with apple cut up and added before nuking it. And/or yoghurt or a bit of butter on top.

I don't know chapter and verse, but they are considered more nutrient-dense and are ok for doing paleo. regular potatoes are "empty carbs." something like that.

I haven't read a book on this or anything but am generally following what's laid out on that Paleo Nom Nom site someone linked upthread. the guidelines on their site come from the book "It Starts With Food."

I've been making sweet potato hash browns for weekend breakfasts - shred 'em, toss with herbs and salt and pepper, fry until you get some crispy bits.
For weekday breakfasts, I roast a big pile of sweet potatos until they are carmelized every weekend - just wash and roast on a foil covered baking sheet for an hour or so at 300F. Flip them over on the sheet when you take them out of the oven and let them cool. The skins peel off so easily. Store the flesh in an airtight container and scoop out a hunk to nuke every morning.

Erica you are having "the low carb flu"
Going below 20 net carbs has made your body freak out a bit, searching for what glycogen it can find still stored in your muscles (about 2-3k calories usually). Once it runs out, you are basically running on empty and your body hasn't yet figured out how to effectively switch over to creating and burning ketones for fuel as opposed to glucose. I'd say for a vegetarian it would be pretty depressing and difficult to do under 20g carbs daily. I'd say up them to 70-100. You're going into ketosis and it is very uncomfortable at first.

Also mineral deficiency is spot on, as glycogen typically has 2g of water stored along with it, you're peeing all that out and it's not being replenished. Drink water with lemon and salt in high amounts!
i would feel sad eating a low carb vegetarian diet. i guess it's possible. but immediately going down to 20 g/day from high-normal carbs should make anyone feel like crap.

I'm down 5 or 6 lbs since Jan 2 and Mr. Jaq is down 12. Also his fasting blood sugar has dropped by 20 points even though he's eating around 100 g of carbs a day including fruit. We're still doing the super-strict Whole30 thing, which I'm liking pretty well. I'm traveling for a work conference next week, so a little concerned but I've got a bunch of Steve's paleokits and coconut butter buttons to take along.

i lost like 8 lbs-ish right away and have just been hovering there, though i did cheat pretty big time over the holidays. i don't think i really feel ~that~ much better. the improvements to my sleep plateaued i.e. it's still largely crappy. but i haven't done any more of the waking up--and staying awake--at 3:00am thing i'd been dealing with for so long(it's happened twice since i started this, as opposed to twice to four times a week). but a lot of my problems feeling shitty i think are sleep related and i think my sleep issues aren't only rooted in diet. but anyway i eat good shit all the time and overall i do feel better, so hay!

I'm going to start this officially on Monday for at least 30 days. Have been sort of heading towards it since Christmas but wanted to get more settled into the semester / be done with traveling.
Of course this week has been spent eating granola, the rest of the yogurt, rice, pizza from the new and only decent pizza place around, toast for breakfast, etc.

been lurking here and trying this out without getting too strict. loving it! i always thought i was hopeless in the kitchen, but i'm keeping it simple and doing just fine.
i'm losing weight too, even though that's not what i'm going for at all. it's mostly because my appetite isn't as voracious as usual, but i also inevitably get a little lazy about preparing meals and just go without or settle for a smaller meal of leftovers.

I'm still doing this. I've fucked the exercise and have been sedentary for the last four weeks :(
The way I keep up with veggies is to make a two big veggie dishes a day and then eat them for several days as leftovers. On any given meal I'll have about four of: baked kale, savoy cabbage coleslaw, collard greens and tomatoes, grated carrot salad, turmeric roasted cauliflower, baked broccoli, spinach salad, cucumber salad, celery soup, red cabbage in a pot with vinegar, etc.

I've been relying more heavily on restaurant food than I should be, at times, but have done a p good job of finding decent paleo friendly stuff to order (e.g. big salad with pork from Chipotle for work lunch). I don't think I could keep on it otherwise.

I use this thread for variety/food inspiration and out of curiosity about ppl and their foods, but I have to say, for the past two weeks I've barely been home one night a week--many days I'm only in my apartment for 2 or 3 hours a day (that I'm not sleeping)--and there is NO WAY to keep up with a diet that can't be picked up in Midtown.
