I don't know if all paleo cuts out soy - the thing we're doing is no legumes at all.

So we've been eating the coconut manna in big chunks because it is so damn good. I got inspired today and after I softened and mixed up the second jar I had, I dropped it by the tsp onto parchment paper then stuck in the fridge for a few minutes. Perfect little coconut manna cookies, omg. It'll make it easier to melt it over the breakfast yams too.

Quinoa's a seed, not a grain so I think it technically is paleo. Some paleo people seem to disapprove though. I'm still eating quinoa muesli in the morning anyway

it's ok. every other recipe calls for xanthan or guar gum as a thickener though. i'd rather just skip that step and have the recipe be a little watery. is corn starch completely off limits?

Weird they would use xanthan gum, since it's a corn derivative. Guar is pretty cool stuff though - I use it all the time. Just the tiniest bit whisked in and you've got a luscious sauce instead of just juices.

Ultratex looks like fun - will have to play with some once we're done with the whole30 thing. Being able to make a creamy custard without milk protein (heavy cream instead of milk once we can have some dairy again) is a project I want to tackle - guar has too much slime and beaniness, arrowroot doesn't provide enough structure

Ran out of coconut milk this morning so used coconut oil in my second cup of coffee - whoa. Stirring really hard isn't close to emulsifying, so a bit of an oil slick on top. Tasted pretty good though.

had soup today. having soup now. carrot/coconut. cheated and had some pudding today. but i deserved some pudding. having big teeth yanked out that had been in my head for 40 years was a little traumatic. didn't fill the pain pill prescription they gave me though. feel okay. i have it in reserve just in case.

yeah one of mine fell apart when they were taking it out and it took some doing to get all the pieces out. oof. very unsettling. i never got my wisdom teeth out and they had been digging into the molars next to them. thus creating a hole in the molars. so, couldn't save them. not that i miss having a root canal or whatever.
