Most UIs aren't that skeumorphic! There aren't really that many real life items with drop-down menus and shit.
Windows 8 probably a mediocre reference point here, but I feel like saying creative iOS developers own "flatness" is kind of wrong-headed.
Windows 8 prerelease 1 did come out a month before iPhone 4S, though.

gotta say tho I have decided that Ikea's corporate identity switch to Verdana was an inspired move. Futura was too far on the "aspirational" end of the scale. Verdana may be an odd choice but it's a pretty good one when you're at the store seeing it in context.
