Was Mayonnaise really invented by an 18th century Irish General in the French army? Or is that transcribed or something? Think I heard a story to that effect. A condiment was named after him but what makes it susbstantially different than the other egg/oil emulsions in the general area isn't certain.
I don't eat a lot of mayonnaise and I tend to like it pretty mustatrdy. I probably only eat it on BLTs and artichokes. I use Greek yogurt for a lot of things I used to use mayo on and just avoid mayo in things like tuna fish, which I frankly prefer in olive oil w/lemon juice. Aiolis and the like are fun to make, though, and I always feel more comfortable that they're made and eaten w/in a day or two.

radishes are pretty strange, they can be good though. they are a sideman. i ate this great weird stewed persian aubergine dish recently & it was topped with sliced radishes, they gave it this zingy contrast.

I had the wonders of radishes revealed to me a couple of years ago when I ordered a few interesting seed varieties instead of just planting the red globes and white icicles available locally.
