i did once get served a portion of 'nachos' which consisted of:

a packet of blue flavour doritos,
microwaved with grated, strong cheddar,
with, on the side, that gloopy and unavoidable 'thai' sweet chilli sauce,
and, yes, mayonnaise

i'm still not sure whether i was being trolled

Ugh, curses on Jamie Oliver for using green bell peppers in that recipe. Back when my wife and I did any entertaining at all, one of our go-to spreads was the 3-chili party: red with beef, "white" with chicken and green chilies (roasted Anaheim), and vegetarian with black beans. Plus cornbread and the usual go-withs. No mayo.

I will make the 'white' chicken chilli, that sounds amazing - plus I have a bunch of green poblanos just sitting here, WAITING to go in something like that (my market farmer grows/sells them so I take LOADS home; my next trick will be getting him to grow/stock padrones).

Mayo mixed with chilli sauce (especially the sweet Thai stuff) is an awesome thing.

Although I would liken it to A-1 (in flavor not consistency as it's a lot thicker) I don't really think of HP as steak sauce at all. I don't think I've ever seen anyone use it on beef. Sausages and bacon sarnies sure but not actually on steak.
